Rest and Recovery

I am a young boxer who is unable to compete due to laser eye surgery but I still take part in training camps for 12 round fights. I train twice a day, 6 days a week for 6 weeks and then have an active recovery week before starting my next 6 week camp, at the end of each camp I am at my peak and can box for 12 rounds. I read that Mackie Shilstone (former Roy Jones and Bernard Hopkins trainer) said you should rest for longer than a week to let your Central Nervous System return to normal but he didn't specify how long, I was hoping a highly respected strength and conditioning coach like yourself could spread some light on this for me please as I dont want to burn out but dont want to lose my conditioning and physique. How long do you think is ideal before returning to training after camp so I am still in shape when I start again but my body has had enough time to recover?
Thank you for your time and will look forward to hearing from you
